I blend everything until smooth, and if the spread seems too thick, I add a bit of the reserved chickpea liquid to get the desired consistency.

Once everything is blended and smooth, I transfer the spread to a serving dish and garnish with a few extra sun-dried tomatoes and fresh oregano for a beautiful presentation.

  • 15 oz can chickpeas, drained and liquid reserved or Cooked chickpeas
  • 3 tbsp aquafaba ( reserved liquid from canned chickpeas) or water
  • 1/3 cup sun-dried tomatoes in olive oil about 8, drained
  • 1 large clove garlic
  • 1/4 cup peanut butter

Seasonings & Flavorings:

  • 2 Tbsp olive oil
  • 2 Tbsp fresh lemon juice
  • 1 tsp salt or to taste
  • 1 Tbsp chopped fresh oregano

Instructions
 

  • Add chickpeas and all other ingredients to a food processor and pulse till smooth. Check the consistency. Add more aquafaba if too thick. Do not add more than 3 tablespoons at a time.
  • Serve topped with more olive oil from sun dried tomato jar and some fresh basil
