Who doesn’t like hummus!? Well, I am not a great fan of hummus, but my husband loves it. He eats hummus and whole wheat toast for breakfast every day. He usually makes a batch on the weekend and then eats it during the week.

This week I decided to make mint hummus for him! I  have plenty of mint in my kitchen garden. Mint kind of took over the entire vegetable bed. I have been using it in every possible way I can, I’ve dried it, made chutney, and even whipped up some mint hummus.  Mint hummus is fresh-tasting and goes great on toast, just the way my husband likes it.

Why Peanut Butter Instead of Tahini

I make hummus with peanut butter instead of traditional tahini. I usually buy organic peanuts from Trader Joe’s. I’ve found that using peanut butter gives the hummus a sweeter taste. It’s a staple in my house, so I can make hummus anytime I want.

Once blended to my liking, I check the consistency. If the hummus is too thick, I adjust it with reserved chickpea liquid until it reaches that ideal creamy texture. A final taste test ensures the balance of flavors, adding a touch more salt if needed. With everything prepared, I spoon the hummus onto plates, creating a shallow well in the center with the back of a spoon. A drizzle of olive oil and a sprinkle of toasted almonds and dried mint complete this simple yet flavorful dish.

  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon salt
  • 1/4th cup Nuts of your choice

Instructions
 

  • In the food processor, add chickpeas, garlic, salt, mint, olive oil, cumin seeds, peanut butter, and lemon juice. I use bullet food blender.
  • Blitz the ingredients until everything is well blended and the mixture becomes smooth. This typically takes less than a minute in my personal bullet food blender.
  • Check the consistency of the hummus. If it's too thick for your liking, add reserved chickpea water gradually until you reach the desired consistency.
  • Taste the hummus and adjust the salt if necessary, according to your preference.
  • Transfer the smooth hummus onto one or two small serving plates.
  • Use the back of a clean spoon to create a well or indentations in the hummus.
  • Drizzle a generous amount of olive oil over the surface of the hummus.
  • Sprinkle chopped nuts
  • Your hummus is now ready to be served and enjoyed!
