  • 1 cup Whole Green Gram Lentils Mung beans , soaked overnight or at least 8 hours
  • 2 tablespoon Oil. I use olive oil.
  • 1 cup onion thinly sliced
  • 1 cup Tomato chopped or ¼ cup canned tomato sauce
  • 3 cup Water
  • 3 tablespoon coconut milk
  • 1.25 teaspoon Salt adjust to taste

For Garnish(optional)

  • Chopped Cilantro
  • Chilled Coconut milk

Ground Spices

  • ½ teaspoon Ground Turmeric
  • 1 teaspoon fennel powder
  • ¼ teaspoon ginger powder

Whole spices

  • 1 teaspoon Cumin seeds
  • 2 Dry red chilli peppers optional . Dont use if you like your dal mild.
  • 1 pinch Hing optional
  • 4 whole cloves
  • 1 bay leaf

Instructions
 

  • Begin by setting the Instant Pot to SAUTE mode and heating oil.
  • When the oil is hot, add whole spices 
  • Wait for cumin to change color, add then add onions. Sauté for 3 minutes.
  • Add tomatoes, spices, salt, and stir.
  • Rinse soaked mung beans.
  • Now, add rinsed beans and water. Stir well, then press CANCEL and close the Instant Pot lid with the vent in the sealing position.
  • Press Pressure Cook mode for 20 minutes. After the Instant Pot beeps, let the pressure release naturally
  • Open the lid. Mash some beans with a spoon for creamier consistency.
  • You may have to add a bit of water if the dal is too thick.
  • Dish the prepared meal into a serving bowl. Top with chopped coriander and a spoonful of vegan butter or chilled coconut milk . I have also garnished with toasted sesame seeds on occasion with deliciously crunchy results!
