Fresh Mint Hummus

Fresh mint hummus is a variation of traditional hummus that incorporates fresh mint leaves into the classic chickpea-based dip. This humm includes ingredients such as chickpeas, garlic, olive oil, lemon juice, and cumin seeds, along with peanut butter for added creaminess. The fresh mint leaves are blended together with these ingredients until smooth, creating a refreshing and aromatic twist on the traditional hummus flavor.
The finished hummus is often garnished with a drizzle of olive oil, chopped almonds, and additional dried mint for extra texture and visual appeal. This variation adds a bright note to the creamy base, making it a flavorful and unique dip or spread.

Equipment

  • 1 Set of Measuring Spoons
  • 1 Blender

Ingredients

  • 15 oz chickpeas canned or cooked
  • 3 tablespoons chickpea liquid or more, as needed
  • 1/4 cup peanut butter
  • 2 tablespoons olive oil
  • 1 cup roughly chopped mint
  • 2 tbsp lemon juice
  • 2 clove garlic cloves
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon salt
  • 1/4th cup Nuts of your choice

Garnish

  • Dried mint optional
  • Olive oil
  • Chopped herbs

Instructions

  • In the food processor, add chickpeas, garlic, salt, mint, olive oil, cumin seeds, peanut butter, and lemon juice. I use bullet food blender.
  • Blitz the ingredients until everything is well blended and the mixture becomes smooth. This typically takes less than a minute in my personal bullet food blender.
  • Check the consistency of the hummus. If it's too thick for your liking, add reserved chickpea water gradually until you reach the desired consistency.
  • Taste the hummus and adjust the salt if necessary, according to your preference.
  • Transfer the smooth hummus onto one or two small serving plates.
  • Use the back of a clean spoon to create a well or indentations in the hummus.
  • Drizzle a generous amount of olive oil over the surface of the hummus.
  • Sprinkle chopped nuts
  • Your hummus is now ready to be served and enjoyed!

Notes

1. Fresh Mint Quantity: Adjust the amount of fresh mint leaves based on personal preference. Start with a smaller amount and add more gradually to achieve the desired level of mint flavor.
2. Consistency Control: The texture of hummus can vary depending on the amount of liquid added. Use reserved chickpea water (aquafaba) sparingly to adjust the consistency to your liking—too much can make the hummus too thin.
3. Peanut Butter Substitution: If preferred, substitute peanut butter with tahini (sesame paste) for a more traditional hummus flavor. This alters the taste profile, so adjust other seasonings accordingly.
4. Blending Time: Blend the ingredients thoroughly in the food processor to ensure a smooth and creamy consistency. Pause occasionally to scrape down the sides of the processor bowl for even blending.
5. Garnishing Tips: Before serving, create a well in the center of the hummus for a drizzle of olive oil. Sprinkle chopped almonds and a pinch of dried mint over the top for added crunch and visual appeal. Adjust the garnishes based on personal taste preferences
