Jackfruit is a tropical fruit native to South and Southeast Asia. It is the largest tree fruit in the world and can grow to massive sizes, weighing up to 80 pounds (36 kilograms) or more. The fruit has a spiky, greenish-yellow exterior with a sweet and fragrant flesh inside.

One of the unique characteristics of jackfruit is its versatility. When unripe, it has a neutral taste and a meaty texture, often used as a plant-based meat substitute in vegan and vegetarian dishes. When ripe, the fruit becomes sweet and can be eaten fresh or used in desserts, jams, and other sweet preparations.

Why I Love Making Vegan Jackfruit Koftas

I love making Vegan kathal Koftas because they offer a unique and flavorful twist to traditional kofta recipes. The process of preparing the jackfruit, mixing it with spices, shaping the balls, and frying them until golden brown is not only enjoyable but also results in a satisfying and nutritious dish. I used chickpea flour to bind the koftas which makes them high protein and even more delicious!

How I Cook My Vegan Jackfruit Koftas

I start by boiling the jackfruit until tender, then mashing it and combining it with chickpea flour, spices, and fresh herbs. After shaping the mixture into balls, I either deep fry or pan-fry them until crispy. These koftas can be simmered in a kofta sauce or enjoyed with a tasty coriander and mint chutney.
