What is Vegetable Korma?
Vegetable Korma is a rich and aromatic Indian dish featuring a creamy sauce infused with a blend of spices and nuts. Traditionally, it includes a variety of vegetables such as carrots, peas, cauliflower, and potatoes, along with paneer (Indian cheese) for added richness and texture. The sauce is crafted by blending a medley of spices, nuts, onions, tomatoes, and other ingredients to create a flavorful base that envelops the vegetables, resulting in a satisfying and wholesome meal.

For those opting for a vegan version, paneer can be replaced with tofu to maintain the dish’s protein content and creamy texture. This adaptation ensures that everyone can enjoy the delectable flavors of Vegetable Korma without compromising on taste or dietary preferences. Additionally, the versatility of the recipe allows for the inclusion of any combination of vegetables, making it adaptable to seasonal produce and personal preferences.

ToggleWhy I Love Making Vegan Vegetable Korma
I love making this vegan Korma because it’s a versatile and comforting dish that never fails to impress. The process of creating the fragrant sauce from scratch is incredibly rewarding, and the aroma that fills the kitchen as it simmers is simply irresistible. Plus, I enjoy the flexibility of choosing my favorite vegetables and adjusting the spice levels to suit my taste preferences. The result is always a delicious and nourishing meal that satisfies both the palate and the soul.
How I Cook My Vegetable Korma
I start by preparing the vegetables and tofu, steaming them until they are tender yet still retain their textures. While the vegetables are steaming, I gather my spices and nuts to create the flavorful korma sauce.
In my Instant Pot, I combine the spice and nut mix and cook it under pressure for about 10 minutes. After allowing the pressure to release naturally and removing the bay leaves, I carefully blend everything into a smooth sauce.
Then, I set the Instant Pot to Manual mode again and added the steamed vegetables and tofu to the sauce, allowing them to mingle and absorb all the delicious flavors.
Once everything is heated through and well combined, I dish out the Vegetable Korma and garnish it with freshly chopped coriander and a drizzle of coconut milk for extra creaminess. The result is a mouthwatering dish that’s perfect for any occasion!
