Tofu

  • 1 14 oz Firm Tofu.

For Sauce:

  • 2 Tbsp Olive oil
  • 1 cup chopped onions
  • 15 oz Can Tomato Sauce
  • 8 garlic cloves
  • 1 inch piece ginger
  • 1/2 cup Cashews
  • 2 tablespoons poppy seeds
  • 2 Bay Leaves
  • 1 teaspoon whole cardamoms( about 12 pieces)
  • 1/4 teaspoon cloves ( 6 to 8 )
  • 1" piece Cinnamon stick
  • 1 Teaspoon Ground cumin
  • 1 TableSpoon Kasoori Methi and fresh coriander leaves for garnish Optional
  • 1 Teaspoon salt( more or less as per taste)
  • 3/4 cup water
  • 1/2 cup coconut milk

Instructions
 

Make Gravy Base in Instant Pot:

  • Turn your Instant Pot on
  • To the insert pot, add all sauce ingredients: onions, tomatoes, garlic, ginger, cashews, poppy seeds, bay leaves, cardamoms, cloves, cinnamon, oil, turmeric, garam masala, kasoori methi, salt, coconut milk , and water
  • Place the lid onto the Instant Pot and set the vent to the sealed position.
  • Use the manual setting to select a 15-minute cook time at high pressure.
  • Release pressure.
  • (For stovetop, bring mixture to a boil. Simmer for 20-30 minutes till soft. )
  • Remove the bay leaf and blend everything until it’s smooth and put it aside. ( I use an immersion blender. That way sauce stays in the pot, and clean up is easy.

Add Tofu

  • Cut tofu into small pieces.
  • Add Tofu to the sauce
  • Add some water if the sauce is too thick
  • Cook for a few minutes.

Final Touch:

  • Add chopped cilantro or mint for freshness.
  • If you like, put a spoonful of coconut cream on top.
