Tofu Feta Cheese Recipe

Introduction

If you are vegan and miss cheese, this recipe is for you. I’m actually not a big fan of dairy cheese, but after making this tofu feta, I was seriously impressed. Tofu feta cheese is a vegan substitute for feta cheese. Instead of dairy, we marinate firm tofu in lemon juice, vinegar, olive oil, herbs, and spices. All these ingredients mimic the tangy and crumbly texture of traditional feta — and the result is delicious, versatile, and perfect for salads, bowls, and wraps.

This vegan tofu feta cheese is perfect for salads, grain bowls, wraps, or even as part of a mezze platter.

Equipment

  • Set of Measuring Spoons
  • Knives, cutting boards, etc
  • Large Glass Container or Jar
  • Tofu Press optional

Ingredients

Main Ingredient:

  • 1 block firm or extra-firm tofu approx. 14 oz or 400g

Marinade:

  • 1/4 cup olive oil
  • 1/4 cup lemon juice freshly squeezed
  • 2 tbsp apple cider vinegar or white wine vinegar
  • 1 tbsp white miso paste for umami and saltiness
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp salt adjust to taste
  • Cracked black pepper to taste
  • 1 tsp nutritional yeast for cheesy flavor optional
  • 1 tsp crushed pepper optional

Instructions

  • Drain the tofu and press it for at least 20–30 minutes to remove excess water. You can use a tofu press or wrap it in a clean towel with a heavy object on top.
  • Once pressed, cut the tofu into small cubes, about 1/2 inch in size.
  • In a bowl or jar, whisk together all the marinade ingredients until well combined.
  • Place the tofu cubes in a glass container or jar and pour the marinade over them. Ensure all pieces are submerged.
  • Seal and refrigerate for at least 4 hours, but overnight is best for full flavor.
  • Serve in salads, wraps, bowls, or as part of a vegan cheese platter.

Notes

1. Pressing tofu is essential – Removing excess moisture helps the tofu absorb more marinade and gives it a firmer, feta-like texture. Use a tofu press or wrap in a towel with a weight on top for at least 15–20 minutes.
2. Marinate longer for stronger flavor – While 4 hours is the minimum, marinating overnight gives the best result with maximum flavor penetration.
3. Use a glass container or jar – Some vinegars and lemon juice can react with metal or plastic containers, so glass is ideal for marinating and storage.
4. Customize your herbs – Classic Greek herbs like oregano and thyme work great, but you can try dill, basil, or rosemary for different flavor profiles.

How I Cook My Tofu Feta

I press the tofu for about 30 minutes to remove excess water — that’s key for flavor absorption.

Then I cut it into cubes and soak it in the marinade overnight in a sealed jar.

The next day, it’s ready to crumble over salads or stir into dishes. It keeps well in the fridge, so I often make a batch on Sunday and use it all week long.

Storage: Keep the tofu feta in an airtight container in the fridge. It stays fresh for up to 5–6 days. You can use the leftover marinade as a salad dressing base.

Frequently Asked Questions

1. Can I use silken tofu instead of firm tofu?

Silken tofu is too soft and won’t hold its shape. Use firm or extra-firm tofu for the best feta-like texture.

2. How long does tofu feta last in the fridge?

It stays fresh for up to 5–6 days when stored in an airtight container in the refrigerator.

3. Can I freeze tofu feta?

You can freeze it, but the texture may change. It will become more sponge-like, which some people enjoy for added chewiness.

4. Is tofu feta healthy?

Yes! Tofu feta is high in protein, lower in fat than dairy feta, and cholesterol-free. It’s a nutritious option for plant-based diets.

5. Can I use other herbs?

Absolutely. You can customize the flavor by adding dill, rosemary, thyme, or even chili flakes for heat.

6. Does it taste exactly like feta?

Not exactly, but it’s very close. Tofu feta has a similar tangy, salty flavor and crumbly texture, especially after marinating overnight.

7. Can I cook or bake tofu feta?

Yes! You can bake it for a firmer, drier texture or add it to warm dishes at the end of cooking to preserve flavor.

8. Can I make this oil-free?

Yes, substitute olive oil with vegetable broth or water. It will be lighter and still flavorful.
