  • 14 oz block Tofu extra firm, cut into rectangles
  • 1 tablespoon Fennel powder

  • 2 tablespoons any preferred oil
  • A pinch Asafoetida
  • 2 Cloves
  • 1 cup water or as needed
  • 4 pods Green cardamom slightly pounded
  • 1 cinnamon stick optional
  • 2 Bay leaves

  • 1 tbsp kasoori methi

Instructions
 

  • In a bowl, add 1 cup of hot water and mix in the turmeric powder. Press tofu and cut into slices.
  • Heat a pan and lightly pan-fry or shallow-fry tofu cubes in a little oil until golden brown on 2 larger sides sides. Place the fried tofu cubes into the turmeric water and set aside to soak.
  • Heat oil in a pan Add a pinch of heeng, then cloves, green , and bay leaves. Sauté until fragrant.
  • Add the turmeric water along with the soaked tofu pieces. Add cinnamon stick ( if using)
  • Stir in fennel powder, dry ginger powder, and salt.
  • Cover and let the tofu simmer gently for 7–10 minutes so it absorbs all the flavors. Then add oat milk, kasoori methi, and let it cook for another 3 minutes. Turn off the heat
  • Garnish with a few saffron strands if desired.
