How I Cook My Shahi Pulao
I start by heating some olive oil in a large pan, allowing it to warm up nicely. Once the oil is hot, I add the cashews and almonds, roasting them on low heat until they turn golden brown. This step adds a lovely nutty flavor that makes the pulao special. Next, I toss in the bay leaf, cinnamon stick, cloves, cardamom pods, and cumin seeds, sautéing them until they release their wonderful aromas.
Then, I add chopped onions and ginger-garlic paste. I follow this by adding the chopped carrot, potato, and peas, and cooking them until they’re just tender. After that, I sprinkle in turmeric, Kashmiri red chili powder, and garam masala, letting the spices meld together beautifully.
Next, I mix in saffron milk and fried onions and fold in the cooked rice, ensuring every grain is coated with the flavorful spices. After covering the pan and letting it simmer for a few minutes, I finish off with fresh coriander, mint, and a splash of lemon juice. It’s a labor of love, and the final dish is always worth it!
