  • 16 oz chopped spinach Palak
  • 4 tablespoons oil
  • 2 cups chopped tomatoes
  • 1 cup chopped onion
  • 3 tablespoon finely chopped garlic
  • 1 inch piece of ginger finely chopped
  • 2 teaspoon paprika or Kashmiri chili powder
  • ½ teaspoon mustard seeds
  • ½ teaspoon turmeric powder
  • 1 cup coconut milk
  • 1.25 teaspoon salt or to taste

For Roasting:

  • 3 tablespoons peanuts
  • 2 tablespoons chana dal
  • 1 teaspoon cumin seeds

For Garnish:

  • 1 Tbsp Kasoori methi

Instructions
 

Roast the Peanuts, cumin, and Dal:

  • In a pan, add peanuts, chana dal, and cumin seeds. Roast until fragrant, about 1 minute. Let cool, then grind into a fine powder. Add one cup water. Mix and Set aside.

Prepare the Spinach:

  • Heat 3 tablespoons oil in a pan. Add mustard seeds and let them splutter.
  • Add minced garlic and ginger. Sauté for a minute.
  • Add the chopped onion and saute till translucent
  • Add tomatoes. Cook for 5 to 6 minutes, or until the tomatoes become soft
  • Add the chopped spinach to the pan and cook until it wilts.

Blend the Roasted Mix:

  • Add the roasted powder mix to the spinach mixture.
  • Stir in turmeric powder, paprika or Kashmiri chili powder, and salt.

Cook the Curry:

  • Mix well, then add the coconut milk. Cover and cook for 15 to 20 minutes over medium heat, adjusting the gravy consistency to your preference. You may have to add some water if the gravy sticks to the pan. Keep checking every 5 minutes.

Finish the Dish:

  • Sprinkle kasuri methi over the curry and mix well before serving.
