The star of the dish is the fragrant coriander paste, which is blended with green chilies, ginger-garlic, roasted peanuts, and a mix of spices like cumin, fennel, and coriander seeds. This paste infuses the rice with a fresh, herby flavor and a hint of nuttiness, while whole spices like cinnamon, cardamom, and mace add a subtle depth and warmth.

 How I Make This Dish

When I make Indian Coriander Rice, I start by preparing the star of the dish—the coriander paste. I gather fresh coriander leaves and stems, green chilies, ginger-garlic paste, roasted peanuts, and a blend of spices like cumin, fennel, and coriander seeds. These ingredients go into a blender with a splash of water, and I blend them into a smooth, vibrant green paste. This paste is what gives the rice its fresh, herby flavor and beautiful color.

Next, I heat oil in a pan and add whole spices like cumin seeds, cardamom, cinnamon, and mace. The aroma of these spices fills the kitchen as they sizzle in the oil. I then toss in some peanuts and dried red chilies, letting them roast until fragrant.

Once the spices are toasted, I add thinly sliced onions and sauté them until they turn golden brown. This step adds a sweet, caramelized flavor to the dish. I then stir in the coriander paste and let it cook for a few minutes until the raw smell disappears and the flavors meld together. If I’m in the mood for extra veggies, I’ll add some chopped potatoes, peas, or carrots at this stage and let them cook until tender.  I am not adding any vegetables in this version.

Finally, I gently fold the cooked rice, ensuring every grain is well-coated with the coriander paste. I mix everything carefully to avoid breaking the rice grains. A pinch of salt and a sprinkle of turmeric powder add the final touches. Once the rice is heated through, I turn off the stove and let it sit for a few minutes to allow the flavors to deepen.

When it’s time to serve, I garnish the rice with a handful of freshly chopped coriander leaves and a squeeze of lemon juice for a zesty finish. This dish is so versatile that it pairs beautifully with raita, salad, or even a simple pickle. It’s a meal that’s quick to prepare, bursting with flavor, and always a hit at my table!

Tips and Techniques

1. Toast the Spices: Lightly toast the whole spices (cumin, cardamom, cinnamon) in oil before adding the onions. This enhances their aroma and flavor.

2. Cook Rice Perfectly: For fluffy rice, rinse it thoroughly to remove excess starch and soak it for 20–30 minutes before cooking.

3. Balance Flavors: Taste the coriander paste before adding it to the rice. Adjust salt, spice, or tanginess (add a squeeze of lemon) as needed.

4. Add Veggies Strategically: If using vegetables, sauté them until tender before adding the rice. This ensures they cook evenly and retain their texture.

5. Garnish for Freshness: Top the dish with freshly chopped coriander leaves or a drizzle of lemon juice before serving for a burst of freshness.
