What is Vegan Biryani?
Vegan Biryani is a delightful and aromatic rice dish inspired by the traditional biryani of the Indian subcontinent. This plant-based version is crafted with fragrant basmati rice, a medley of vegetables, and a rich blend of spices like cumin, cardamom, and turmeric. The rice and spices are cooked separately, then layered together to create a mouthwatering dish.
This one-pot vegan biryani celebrates the essence of Indian cuisine, offering a dish that’s perfect for gatherings, festive occasions, or a comforting meal at home. Bursting with flavor and nutrition, it’s a testament to how delicious and hearty plant-based meals can be.

ToggleWhy I love making Vegan Biryani
I grew up eating all kinds of Biryani. My dad used to cook the best lamb biryani, filling our home with the most incredible aromas and flavors. It was a family tradition that after a family wedding, my dad would cook his signature lamb biryani for everyone. Indian weddings can be very exhausting, and everyone would eagerly look forward to the day when all the rituals are over and we gather to eat the delicious biryani cooked by my dad.
When I had kids of my own, I started cooking it for them, carrying on the tradition. They love it and request it at least twice a month. What makes me love making this dish even more is that it’s a perfect one-pot meal. It’s incredibly flavorful, with each bite bringing back memories of family gatherings and joyful meals. I pair it with a simple salad, raita, or some steamed broccoli, and we have ourselves a complete and satisfying meal that my family enjoys.
In recent years, as I’ve leaned more towards a vegan diet, I’ve found myself adapting my beloved family tradition of cooking biryani. While I still cherish the memories of my dad’s signature lamb biryani, I’ve discovered the joys of exploring plant-based alternatives. Experimenting with ingredients like tofu, beans, and a variety of vegetables, I’ve recreated the essence of biryani in a vegan-friendly way.
It’s been a delightful journey of culinary discovery, finding ways to infuse the same rich aromas and flavors into my vegan biryanis. Surprisingly, the results have been outstanding. My family has embraced these new versions with open arms.
What’s even more satisfying is knowing that these vegan biryanis not only taste delicious but also align with my evolving dietary choices. It’s a wonderful feeling to share this aspect of my journey with my children, passing on not just a family recipe but also a commitment to mindful eating and culinary creativity.
So now, whether it’s a special occasion or just a cozy family dinner, we gather around the table, enjoying the diverse
flavors of our beloved biryanis, both traditional and vegan.

How I cook my Vegan Biryani
To start preparing my Vegan Biryani, I choose a variety of fresh vegetables and soya nuggets.
While I prepare the vegetables, I focus on the rice. After rinsing it thoroughly to remove excess starch, I soak it in water along with a blend of aromatic spices. This soaking allows the rice to absorb the spice flavors, creating a fragrant and flavorful base for the Biryani.
Once the rice has soaked for at least 30 minutes, I cook it until it’s fluffy and perfectly done. Simultaneously, I sauté the vegetables with a mix of spices to bring out their natural tastes and textures.
In a large serving bowl, I layer the cooked rice with the sautéed vegetables and spices. Using a wide dish ensures easy mixing and serving. I add a drizzle of saffron-infused milk for a touch of aroma.
Finally, I top the Biryani with toasted nuts or fresh herbs for an added layer of flavor and texture.
With everything assembled, it’s time to enjoy my homemade Vegan Biryani without coconut milk or marination!
