How I Cook My Bhindi Aloo Sabzi
I start by heating oil in a pan and adding cumin seeds and optional asafoetida to give a warm, earthy aroma. As soon as the cumin seeds pop, I add onions and sauté them until they’re soft and translucent, releasing their sweetness.
Then, I add the okra, giving it a quick stir so it can begin to soften slightly, and add dry red chilies if I want a bit more heat. Once the okra has sautéed for a few minutes, I add in the cubed potatoes, cumin powder, red chili powder, turmeric, and salt. I mix everything well, adding a little water, then cover the pan and let the vegetables cook until tender.
When the potatoes and okra are cooked, I finish by stirring in garam masala for a burst of flavor and garnish with fresh cilantro for a bright, fresh finish.
