Equipment

  • Cutting Boards and Knives
  • One Set of measuring cups
  • Oven

Ingredients

  • 2 large or 4 small beets peeled and cut into chunks to match carrot size
  • 1 lb Brussels sprouts halved with outer leaves removed
  • 2 large carrots peeled and cut into chunks)
  • 3 tbsp olive oil
  • ½ tsp red pepper flakes optional, for a mild spice
  • 10 large garlic cloves
  • Salt and pepper to taste
  • ¼ cup herbs such as rosemary or oregano, fresh or dried
  • 1/3 cup toasted walnuts or pecans

Instructions

Preheat the Oven:

  • Set your oven to 350°F (175°C).

Prepare the Vegetables:

  • In a large mixing bowl, combine the beets, Brussels sprouts, carrots, and garlic cloves. Drizzle with olive oil and toss until the vegetables are evenly coated. Add salt, pepper, herbs, and red pepper flakes (if using). Mix well to distribute the seasonings.

Arrange and Roast:

  • Spread the seasoned vegetables in a single layer on a large baking sheet. Make sure there’s enough space between them for even roasting—crowding can lead to steaming instead of caramelizing.

Bake:

  • Roast the vegetables in the preheated oven for 45–60 minutes, stirring once halfway through to ensure even cooking. Remove when the vegetables are tender and slightly caramelized, and the Brussels sprouts are golden brown.

Serve:

  • Transfer the roasted vegetables to a serving platter and garnish with additional herbs if desired. Serve warm.
  • You can top it with toasted pecans or walnuts for a delicious crunch.
