Knives, cutting boards, etc
- 2 cups sweet onion thinly sliced (Vidalia, Maui, or white onions work best)
- A few cups of iced water to soak onion s
- 2 tablespoons freshly squeezed lemon juice or wine vinegar
- ¾ teaspoon kosher salt or to taste
- ½ teaspoon sweet paprika
- 1 chopped green chili optional, adjust to your taste
- 2 tablespoons chopped fresh mint or coriander leaves
Season the Onions
Drain the onions well and pat them dry with a clean cloth or paper towel. Return the onions to the bowl and add lemon juice or vinegar, salt, paprika, chopped green chili (if you like a bit of spice), and fresh herbs. Stir everything together and let the mixture sit at room temperature for at least 30 minutes. This resting period allows the flavors to meld beautifully.
Serve or Store
Once the onions have absorbed all the flavors, you can serve the relish immediately or store it in an airtight container in the fridge for up to two weeks. The longer it sits, the more the flavors will develop. Pyaz Ka Laccha makes a great side for grilled or roasted vegetables, a topping for pizza, burgers, or hot dogs, or even a tasty addition to scrambled eggs or salads.
1. Use fresh, thinly sliced red or white onions for crisp texture. 2. Season with lemon juice, chaat masala, and salt for tangy flavor. 3. Chill for 10–15 minutes to blend flavors and retain crunch. 4. Add roasted cumin or julienned veggies for variety.
