Experience the delightful flavors of traditional kheer with this easy vegan recipe that’s perfect for any occasion. This plant-based version uses soaked jasmine rice and oat milk, to create a wonderfully creamy and indulgent pudding. The oat milk lends a velvety texture while ensuring the dessert remains completely dairy-free. You can use any plant-based milk. The recipe balances the subtle richness of the milk, and fragrant cardamom, which imparts a warm, aromatic depth to every bite. For added texture and flavor, the kheer is garnished with a mix of crunchy nuts and golden raisins, adding a delightful contrast to the smooth, creamy pudding.
Prepare the Rice: Soak the jasmine rice in cold water for 15 to 30 minutes. Drain, rinse, and set aside.
Cook the Rice: Press the sauté button on your pot and add 2 cups of water. Once the water starts to steam, pour in the milk (this prevents the milk from burning). Add the soaked rice and stir to combine. Add cardamoms
Pressure Cook: Secure the lid, close the pressure valve, and cook on high pressure for 20 minutes. Allow the pressure to release naturally.
Finish the Kheer: Once the pressure is released, open the lids. Press the sauté button again. Stir in the sugar, nuts, and golden raisins. Mix until well combined. The kheer will thicken as it cools. For a thicker pudding, continue to sauté and stir until you reach your desired consistency. Carefully remove cardamoms if you like. I leave them in.
Enjoy your creamy, delicious kheer!
