Instructions
 

  • Chop all Veggies. Cut Zucchini and potatoes in 1" cubes. Thinly slice onions
  • Heat oil in a pan. Add cumin and mustard seeds. Let them sizzle. Add chopped onions. Sauté until golden. Add turmeric, coriander, red chili powder, and salt. Cook for a minute.
  • Add diced potatoes. Stir to coat with the masala.
  • Add a splash of water, cover, and let the potatoes cook halfway (5–6 minutes).
  • Add chopped zucchini.
  • Mix well. Cover and simmer for 10–12 minutes until potatoes and zucchini are tender.
  • Garnish with amchur, cashews, and fresh cilantro and serve hot.
