Eggplant Raita (Baingan Raita)

Spiced Eggplant Raita

This spiced eggplant raita is a simple and cooling dish made with roasted Japanese eggplant and creamy vegan yogurt. I like using cashew yoghurt, but any plant-based yoghurt works well. It’s flavored with turmeric, paprika, and roasted until golden, giving the raita a smoky and slightly spicy kick, without needing any tempering or tadka!

Perfect for summer meals or as a side with rice, pulao, or paratha, this raita takes minimal effort and brings maximum flavor. I often make this when I have just one eggplant sitting in the fridge and want to use it up in a fun, flavorful way.

Eggplant Raita Recipe

This easy spiced eggplant raita is a great way to use just one Japanese eggplant and some plain yogurt. The eggplant is marinated in turmeric and paprika, then pan-fried until golden and soft. It is then folded into smooth yogurt to create a creamy, flavorful side dish.
This version does not include tempering, which makes the recipe quicker and simpler. Japanese eggplant works best here because it cooks fast and has tender skin. The result is a cooling, slightly smoky raita that pairs well with rice, flatbreads, or curries. You can also make it vegan by using dairy-free yogurt.

Notes

Use fresh yogurt – Make sure your yogurt is fresh and not sour. If it’s too tangy, it can overpower the flavor of the eggplant.
Slice eggplant evenly – Try to cut the eggplant slices evenly so they cook at the same rate and don’t burn or remain undercooked.
Let eggplant cool before mixing – Always cool the cooked eggplant before adding it to the yogurt. Hot eggplant can curdle the yogurt.
Adjust salt carefully – Taste the yogurt before adding salt. Remember, the eggplant is already marinated with salt, so you may need less in the yogurt.
Serve chilled – This raita tastes best when served cold. Chill it for 15–20 minutes before serving for a refreshing flavor.

Why I Love Making Eggplant Raita

I love making eggplant raita because it’s simple, comforting, and full of flavor. The eggplant turns soft and smoky when roasted, and the spices add just the right amount of warmth.

It’s a great way to use a single eggplant and turn it into something satisfying. I also like that it doesn’t need a lot of oil or a long cooking time. It is a great snack, topped with some walnuts. Yum!

Why Use Japanese Eggplant?

Yes, you can use any variety of eggplant for this raita, but I prefer Japanese eggplant. It has tender skin, fewer seeds, and a mild, sweet flavor that works beautifully in yogurt-based dishes. The small slices cook quickly and evenly, making them ideal for pan-frying or roasting.

They also hold their shape well without turning mushy, which adds a nice texture to the raita. If you have other types of eggplant at home, feel free to use them—just slice them thin and adjust the cooking time slightly.

If you use large eggplant, make sure to chop it into smaller pieces after roasting.
