What is Sticky Tempeh?
Sticky Tempeh is a savory, slightly sweet, and spicy dish made by pan-frying tempeh until it’s golden and crispy, then coating it in a glossy sauce made with soy sauce, vinegar, brown sugar, and Sriracha.

It’s perfect served over rice or noodles, or even wrapped in lettuce leaves for a fresh bite. This version is completely vegan and loaded with flavor, making it a great alternative to meat-based stir-fry dishes.
Why I Love Making Sticky Tempeh
I’ll be honest—tempeh and I didn’t start off on the best terms. I bought it years ago, tried it once, and wasn’t a fan of the taste or texture. It sat in my memory as “that one weird soy beany thing” I wasn’t sure I’d ever go back to.
But recently, I had tempeh at a friends house, and it was a completely different experience—crispy, flavorful, and coated in this sticky, savory glaze that had me rethinking everything. That moment inspired me to give it another shot in my own kitchen.
After some experimenting, I found that adding fresh ginger and green onions was a total game changer. They bring brightness and a fresh punch that balances the richness of the glaze.
Now, this Sticky Tempeh has become one of my go-to dishes when I want something quick, bold, and super s
atisfying.
What is Needed to Make Sticky Tempeh
Main Ingredients:
- Tempeh: The star of the dish, providing a firm bite and protein-rich base.
- Soy Sauce: Brings saltiness and umami flavor to the glaze.
- Brown Sugar: Balances the spice and salt with a hint of sweetness.
- Sriracha: Adds heat and a little tang.
- Olive Oil: Used for cooking and helping tempeh crisp up.
Aromatics:
- Garlic: Adds a savory depth and fragrance.
- Ginger: Brings warmth and a bit of zing.
- Spring Onions: For freshness, texture, and garnish.

Seasonings:
- Salt & Black Pepper: Enhances all the other flavors.
Low-Fat Alternatives
- Use low-sodium soy sauce to reduce salt.
- Replace brown sugar with a small amount of maple syrup or coconut sugar.
- Use water sautéing or spray oil to reduce overall fat content.
- Skip the oil altogether and bake the tempeh instead of pan-frying.
How I Cook My Sticky Tempeh
I start by mixing up the sauce—just soy sauce, rice vinegar, brown sugar, and a squeeze of Sriracha. It’s super quick and you just need to stir until the sugar dissolves. Then, I crumble the tempeh into bite-sized pieces and pan-fry it in a bit of oil until it’s golden and crispy on the edges.
After setting the tempeh aside, I toss some garlic and the white part of the spring onions into the same pan and let them get fragrant. I add in a bit of grated ginger too—it smells amazing at this point.
Then I bring the tempeh back in, pour over the sauce, and stir until everything is coated and sticky. I finish it off with the green onion tops!
Sticky Tempeh Cooking Tips and Techniques
Use a non-stick or well-seasoned pan to keep the tempeh from sticking.
Don’t overcrowd the pan—give tempeh space to brown properly.
Crush the tempeh into uneven pieces for better texture and crispiness.
Taste the sauce before adding it—adjust spice or sweetness if needed.
Add the sauce on low heat to avoid burning the sugar.
