Shawarma is a Middle Eastern dish traditionally made with meat that is marinated in a rich blend of spices, stacked on a vertical rotisserie, and slow-cooked until tender—my version swaps meat for cauliflower, creating a plant-based alternative that is just as flavorful and satisfying. By roasting cauliflower with a bold mix of spices, I achieve the same depth of taste and texture that makes shawarma so beloved.

I love making Cauliflower Shawarma because it’s a simple, nutritious, and flavor-packed dish. Roasting cauliflower brings out its natural sweetness, while the spice blend adds warmth and depth. What is Needed to Make Cauliflower Shawarma?

Main Ingredient:

Cauliflower: The star of this dish, providing a hearty and satisfying texture that absorbs flavors well.

Olive Oil: Helps coat the cauliflower evenly and aids in roasting.

Onion: Adds natural sweetness and depth to the dish.

 

Ground Spices:

Cumin, Coriander, Turmeric, Paprika, Onion Powder, ground back pepper, Clove, Cayenne: These spices work together to create the signature shawarma flavor, balancing warmth, smokiness, and a hint of spice.

Sea Salt: Enhances all the flavors.

Other Ingredients:

Parsley: Provides freshness and color.

Some Low-Fat Alternatives:

Instead of olive oil, you can use vegetable broth or a light cooking spray.

Why I don’t use frozen cauliflower for this recipe

Frozen cauliflower contains more moisture than fresh cauliflower, which can affect the texture and flavor of the dish. When roasted, frozen cauliflower tends to become softer and steam rather than crisp up, preventing the nice golden-brown caramelization that makes this shawarma-style dish so delicious.

Fresh cauliflower, on the other hand, roasts beautifully, developing a slightly crunchy exterior while remaining tender inside. If you only have frozen cauliflower, make sure to thaw it completely and pat it dry to remove excess moisture before seasoning and roasting.

How I Cook My Cauliflower Shawarma

I start by preheating my oven to 425°F.  I cut cauliflower into bite-sized pieces and slice onions  . Then, I put all the spices and olive oil in a large bowl,

 

 

Mix all spices with oil. Next, I toss the cauliflower and onions in this aromatic mixture, ensuring each piece is fully coated.

Once seasoned, I spread everything onto a baking sheet and roast it in the oven.Halfway through, I flip the cauliflower to make sure it gets evenly crispy. After about 30-40 minutes, when it turns golden brown, I remove it from the oven and garnish it with fresh parsley.

I love serving it with warm pita alongside my spicy harissa sauce or my  sun-dried tomato hummus.

  • 1 large head cauliflower about 2½ lbs, cut into bite-sized florets
  • 1 large onion cut into long slices
  • 3 tbsp extra-virgin olive oil plus more if needed
  • 1 tsp ground cumin
  • ½ tsp turmeric powder
  • 1 tsp sweet paprika
  • 1 tsp onion powder
  • ½ tsp ground clove
  • 1 tsp sea salt or to taste
  • 1 tsp ground coriander
  • ¼ tsp freshly ground black pepper
  • Pinch of ground cayenne optional
  • ¼ cup chopped parsley (plus extra for garnish)

Instructions
 

  • Preheat your oven to 425°F (220°C). Cut cauliflower into bite-sized pieces. Cut the onion in half. Cut each half into slices.
  • Prepare the Shawarma Spice Mix. In a large mixing bowl, combine the olive oil, ground cumin, turmeric, sweet paprika, onion powder, ground clove, sea salt, ground coriander, black pepper, and cayenne.
  • Whisk until the spices are fully incorporated and the oil.
  • Add the cauliflower florets and sliced onion to the bowl with the spice mixture. Toss everything together to ensure the vegetables are evenly coated with the shawarma seasoning.
  • Spread the seasoned cauliflower and onion evenly on a baking sheet. Place the sheet in the oven on the top rack and roast for 20 minutes.
  • After 20 minutes, take the tray out and flip all the pieces. Give another 10 to 15 minutes until the vegetables are nicely cooked and golden.
  • Once the cauliflower and onion are roasted, remove them from the oven and sprinkle them with chopped parsley. Serve hot
