How I Cook My Chickpea Crackers

I start by preheating my oven to 325°F. Then, I mix all the dry ingredients—chickpea flour, flax seeds,  hemp seeds, nutritional yeast, garlic powder, and salt—in a bowl.

Next, I add the olive oil and slowly incorporate water until a thick dough forms.

After letting the dough sit for 10 minutes, I roll it out between two greased sheets of parchment paper until it’s about 1/8 inch thick.I either cut it into squares before baking or leave it whole and break it apart later.

After baking for 10 minutes, I flip the cracker and bake for another 10–15 minutes until golden and crispy.

Once cooled, I break them into pieces and store them in an airtight container.

  • 1 cup chickpea flour
  • cup flax seeds
  • cup sesame seeds or hemp seeds
  • 2 tbsp nutritional yeast
  • ½ tsp garlic powder
  • 1 tsp salt
  • 3 to 4 tbsp water adjust as needed to make dough
  • 1 tbsp olive oil or melted coconut oil

Instructions
 

  • Preheat Oven: Set to 325°F (160°C). In a bowl, combine chickpea flour, flax seeds, sesame seeds or hemp seeds, nutritional yeast, salt, and garlic powder.
  • Stir in olive oil and gradually add water, mixing until a thick dough forms.
  • Let the dough sit for 10 minutes.
  • Lightly grease 2 pieces of parchment paper and place the dough between them. Roll it out thin (about ⅛ inch) with a rolling pin. You can cut the dough into smaller pieces with a pizza cutter or a knife. I like to leave it whole and then break it apart after baking for a nice rustic look.
  • Take the top sheet off and slide the bottom sheet onto a baking sheet
  • Bake for 10 minutes. After 10 minutes, take the tray out and flip the crackers.
  • Let it cool and then break the cracker into small pieces.
  • Cool & Store: Let cool before eating. Store in an airtight container for up to a week.
